Product Description | Agar belongs to the galactan polysaccharides, constituting the intracellular matrix in red algae/seaweed belonging to the Rhodophyta class. Agar is naturally slightly sulfated and is a complex mixture of polysaccharides. Agarose is a neutral polymeric component of agar. Agarose heating gives rise to a form of solution which, on cooling, turns into a gel. Gel formation occurs due to the double helical formation of molecular chains, which forms a network of immobilization of water. |
